Babylon, Brisbane.
Babylon, Brisbane.

The team behind the venue is referring to it as an "urban dining and drinking metropolis" and for good reason.

The silly season may be over but the party scene is showing no signs of slowing down in Brisbane, where Babylon, with sweeping Story Bridge views, has just opened its doors.

Babylon features a 120-seat restaurant and 14-person private dining room, and - in the coming weeks - is set to launch three levels of bars, terraces and dining haunts.

Nab a table in the dining room inspired by the ancient metropolis of Babylon - think screens of terracotta bricks and red marble tabletops - and dive into chef Ferdinand Sari's menu, brimming with treats such as lamb and pistachio kebabs.

Just don't forget to order one of the signature cocktails. Rosey Lokum - with vanilla vodka, lemon gin and a dash of rose water - is a standout.

My all-time favourite destination is ... New York. You can drop a pin anywhere in Manhattan and start walking in any direction, and the sights and sounds of the city that never stops will begin to stimulate all your senses in an instant.

Next on my bucket list is … Scandinavia - at the peak of summer, when the sun almost never sets.

My top travel tip is … If you’re flying to Sydney from anywhere in the world, pick a window seat far from the wing on the left-hand-side of the aeroplane. If the weather gods and flight path align, you’ll have the most incredible views of the Sydney Harbour and Opera House.
